In a saucepan over medium heat, heat the oil and sauté the onion until translucent. Add the garlic (if using) and stir for a few seconds. Now add the beans, passata or crushed tomatoes and tomato paste, mustard, sugar, oregano and salt. Stir and simmer for about 5 minutes, or until the sugar has dissolved. Crumble the feta over the top, then put under a hot grill for a few minutes until a golden crust forms.

To serve, pile the rocket on top and finish with some pepper.

Polenta is ground corn, which is why it is sometimes referred to as cornmeal. It is available finely or coarsely ground. Once considered peasant food by the Italians – as it was cheap, bland and filling – these days we prize it for its nutritional value, lack of gluten and versatility.
